Ending the masterclass with new insights into the enchanting world of mushrooms!

In conjunction with Singapore International Agri-Food Week 2022, culinary students and their chef-trainers were invited to a city-friendly edition of Fable Food Co’s Mushroom Foraging and Masterclass, hosted by SATS Ltd and Country Foods, held at The Arts House at The Old Parliament.

Introduced to a wondrous range of fungi, they discovered the boundless possibilities in the mushroom-based meat-alternative space, which seeks to disrupt the meat industry. There were fantastical mushroom stories told, various cooking techniques demonstrated by Jim Fuller, Fable Food’s Co-Founder and Chief Science Officer, who is also a fine-dining chef, chemical engineer and mycologist (mushroom scientist), as well as a delicious degustation of mushroom dish varieties: such as Texan BBQ pulled mushrooms and the crowd favourite, a dried shiitake and dried cordyceps flower soup!

Shiitake mushrooms, the basis of The Fable’s plant-based alt-meat products like their meaty pulled mushrooms, have a lot of texture, flavour and importantly, are equally appealing and a healthier, sustainable alternative to meat. Fable’s meaty mushrooms are also loved by top chefs like Chef Heston Blumenthal, who has championed their products in his restaurant dishes since Fable’s inception.
