Course Structure

Course Duration & Structure

The total duration is 22 hours. This includes:

  • Classroom Training – 20 hours
  • Assessment – 2 hours

Assessment

Theory and practical assessments will be conducted. 

Certification

Upon successful completion of the programme, participants will receive a Statement of Attainment issued by SkillsFuture Singapore (SSG).

Course Outline

Topics include:

  • Roasting and baking food
  • Broiling and grilling food
  • Pan-frying and sautéing food
  • Deep-frying food

Hands-on Practical Sessions (subject to change):

Session 1:

  1. Whole Roast Chicken
  2. Lyonnaise Potatoes
  3. Sautéed Vegetables and Roast Gravy

Session 2

  1. Pan-fried Seabass
  2. Baked Potatoes
  3. Buttered Vegetables and Lemon Butter Sauce

Session 3

  1. Chicken Roulade with Mushroom Duxelles
  2. Crushed Potatoes
  3. Pan-tossed Fine Beans and Demi-glace Sauce
